Cookies & Cream Cookies


By the time you guys read this I'm most likely looking like a beached whale sunning it in sunny Ibiza. Girls holiday- someone's gotta do it, right? ;) I'm very fortunate that my workplace allows for a generous holiday allowance but this, unfortunately, is the last of the year until April when the new tax year starts. I know that may seem like ages away but I'm pretty much certain time will fly by. I mean, it's September next week! (Cinnamon, apples, pumpkin hellooo and not to mention loads of birthday cake for me...)


So I'm going to keep this short and sweet. Cookies in a cookie- what can be better, right? This is loosely based on a recipe I'd seen on Kirbie's Cravings. Coincidentally I had a packet of Oreos I'd bought a while ago so worked out perfectly. These cookies bake up lovely and thick; the outer layer has a buttery crumbly texture and the inside soft with a slight chew.



Enjoy with a glass of cold milk.

COOKIES & CREAM COOKIES
Loosely adapted from Kirbie's Cravings.
Yields 18-20 cookies.

100g bread flour
240g plain flour
1 tbsp corn flour
1 tsp baking soda
1/2 tsp baking powder
225g salted butter, softened (or unsalted butter + 1/2 tsp salt)
200g caster sugar
50g dark brown sugar
1 egg
1 tsp vanilla extract
1 packet of Oreo cookies (14 cookies)


  1. Preheat the oven to 180°C. Line baking sheets with parchment paper.
  2. Sift the flours, baking powder and baking soda into a bowl. Set aside.
  3. Using a stand mixer (or electric hand whisk) cream the butter and sugars together until light and fluffy. Beat in the egg and vanilla extract and mix until incorporated.
  4. Add the flour mixture and mix until a dough is formed. 
  5. Add the Oreos, whole, and mix on medium speed until crushed and blended into the dough.
  6. Roll into balls (approx. 2 tbsp worth of dough) and place on baking tray. Flatten slightly with your hands (or the back of a spoon) and bake for 10-11 mins until edges are lightly brown.
  7. Cool for 10 mins on baking sheet before transferring to a wire rack to cool completely.
